Method
Oven preparation: Preheat your oven to 200°C (fan 180°C) or 400°F. Line a baking tray with parchment paper.
Cheese melting: Combine the mozzarella and cream cheese in a microwave-safe bowl. Microwave in 20-second intervals, stirring after each, until fully melted and smooth. Let cool slightly.
Dough formation: In a food processor, combine the melted cheese, almond flour, baking powder, and 2 eggs. Blend until a thick, sticky dough forms.
Shaping: Lightly dust a surface with almond flour. Transfer the dough and knead briefly with damp hands until smooth. Divide into 6 equal portions, roll into balls, and flatten slightly into bun shapes on the tray.
Finishing touches: Beat the remaining egg and brush over the buns. Sprinkle with sesame seeds if desired.
Baking: Bake for 14-17 minutes, or until golden brown. Let cool for 5 minutes before slicing.
Refrigerate: Store in an airtight container for up to 1 week.
Freezing: Slice and freeze in a zip-lock bag for up to 6 months.
Reheating: Microwave for 30 seconds or warm in a non-stick pan.
