If you don't have Dijon mustard, yellow mustard works as well.

Method


Whisking Ingredients: In a medium bowl, whisk together the Dijon mustard, yellow mustard, apple cider vinegar, sea salt, black pepper, and stevia until smooth and well combined.

Emulsifying: Slowly drizzle in the extra virgin olive oil while continuously whisking until the dressing is emulsified and smooth.

Tasting and Adjusting: Taste the dressing and adjust the seasoning with more salt, pepper, or stevia if needed. You can also adjust the tanginess by adding more apple cider vinegar if desired.

Chilling: Transfer the dressing to a jar or an airtight container and refrigerate for at least 30 minutes to let the flavors meld together.

Serving: Give the dressing a good stir before serving. It pairs wonderfully with salads, grilled chicken, or as a dip for veggies.

Refrigerate: Store in an airtight container in the refrigerator for up to 5–7 days.

Freeze: Not recommended, as separation may occur when thawed.
