Feel free to use any kind of sausage you like—whether it’s sausage, frankfurter, or hot dog—in your favorite flavor, such as chicken or turkey.
Method
Melt mozzarella: Place shredded mozzarella in a microwave-safe bowl and melt it in the microwave.
Combine ingredients: Once the mozzarella is melted, add almond flour, cream cheese and psyllium husk to the bowl. Mix until a dough forms.
Roll out dough: Place the dough between two pieces of baking parchment and roll it out into a thin layer.
Place frankfurters: Lay frankfurters on one end of the pastry dough.
Roll up: Carefully roll up the pastry dough with the frankfurters inside.
Cut and brush: Slice the rolled-up dough into 3 equal pieces. Brush the tops lightly with egg wash.
Bake: Preheat the oven to 160°C (320°F) and bake the pastry rolls for approximately 20 minutes, or until golden brown.

Refrigeration: Store cooked sausage rolls in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven at 160°C (320°F) for 5-8 minutes to restore crispness.
Freezing: Freezing is not recommended for sausage rolls as it may affect the dough texture and overall taste of the recipe.
