Method
Preheating: Preheat the oven to 190°C (375°F).
Dish preparation: Grease an ovenproof dish.
First layering: Arrange one-third of the zucchini and onion slices in the dish, overlapping slightly. Season with salt and pepper, then sprinkle with 0.5 cup of shredded cheese.
Continued layering: Repeat the layering process two more times, using all the zucchini, onions, and cheese.
Sauce preparation: In a microwave-safe bowl, combine garlic powder, butter, heavy cream, and xanthan gum.
Heating sauce: Heat the mixture for one minute or until the butter melts, then whisk until smooth.
Combining: Carefully pour the butter and cream mixture over the layered zucchini.
Baking: Bake for approximately 45 minutes, or until the liquid thickens and the top is golden brown.
